Beef Sirloin with Cream Sauce „Svíčková”

„Svíčková na smetaně” is the most popular sauce in the Czech Republic. No matter how old, everyone loves it. Czech men usually judge their future brides according to their ability to prepare this sauce and dumplings. The most traditional recipe contains beef meat, but you can also use pork or rabbit meat.

Meat and sauce

  • 1 kg of beef sirloin
  • 150 g of bacon (not sliced)
  • 150 g of parsley
  • 150 g of celery root
  • 300 g of carrots
  • 300 g of onions
  • 10 peppercorns
  • 5 allspice berries
  • 4 bay leaves
  • 200 ml of cream
  • 2 spoons of mustard
  • 80 g of sugar
  • Lemon, salt, oil, water or broth

Bread dumplings

  • 500 ml of milk
  • 1 kg of fine wheat flour
  • 2 eggs
  • 20 g of yeast
  • 20g salt
  • Teaspoon of sugar

Clean the meat and interlard with sticks of bacon. Salt the meat. Cut the rest of the bacon and stir-fry in oil with meat shortly. Remove the meat. Dice onion and vegetables and fry in oil with bacon until it gets golden. Add peppercorn, allspice and bay leaves. Add sugar and let caramelize. Add mustard and peeled and sliced lemon. Cover with water or broth. Place meat in sauce and stew for about 1 1/2 hours until meat is tender. Remove meat from sauce. Remove peppercorns, allspice and bay leaves. Mix vegetable with a mixer and add cream. Season according to your taste with salt, sugar or vinegar. Preparation of bread dumplings: Warm the milk until tepid. Put 100 ml of milk into a bowl, add crumbled yeast and sugar. Let yeast rest and ferment in a warm place. Cut rolls into small cubes. Sift flour into a clean bowl and mix with salt. Add eggs, warm milk and leaven. Using your hands knead thoroughly and blend with rolls. Cover the bowl with a cloth and let rise for 1 hour in warm place. Divide the dough into 3 or 4 parts. Knead again and form long rolls. Put in boiling water for about 20 minutes. Pierce with skewers to make sure dumplings are cooked. Cut into 2 inches thick slices and serve with sauce and meat. Garnish with lemon slice, cranberries and whipped cream.
