Fruit Filled Dumplings „Ovocné knedlíky”
The Czechs love dumplings and they eat them also in a sweet version. Dumplings filled with blueberries or plums are the most popular, but you can fill them with anything you like. Some people even choose bananas or apples. Or you can also cook plain dumplings and serve them with warm fruit sauce.
- 300 g of all-purpose flour
- Pinch of salt
- 10 g of sugar
- 190 ml lukewarm milk
- 10 g of fresh yeast
- 5 g of melted butter
- 1 egg yolk
- Sugar (optional)
- 250 g (about 10 ounces) of fruit (blueberries, strawberries, apricots, plums)
In a large bowl, mix flour with salt and sugar. Make a dimple in the centre and pour in warm milk in which you had dissolved yeast. Let it rest for about 10 minutes. Add melted butter and egg yolk and mix it. If the dough is too sticky, use a wooden spoon to beat it until it becomes smooth. Cover the bowl with a clean towel and set aside to rise in a warm place until it doubles in size. Scoop about a tablespoon of dough and flatten it into an oval shape. Put the fruit of your choice in the middle. Larger fruits such as plums and apricots can be used in one piece. Add a pinch of sugar and pinch the dough together to form a dumpling. Turn the dumpling upside down and place it on a floured surface and let it rise. In a large pan, bring water to boil. Turn the heat down to a gentle simmer and put in about 5 dumplings at a time. Cover and boil for 5-8 minutes, according to the size of the dumplings. If you have a steamer, you can also steam them. Serve with cottage cheese, melted butter and sugar to taste.
